Every Juicy Detail

Cut from the same luxurious muscle as our tenderloin filets, this roast comes from the softest-working part of the animal. The tenderloin lives in quiet comfort along the inside of the backbone, which is why it stays so exceptionally tender and fine-grained.

Because a grass-fed and grass-finished animal yields only a small amount of tenderloin, each roast is inherently rare. We dry age ours for fourteen days and hand trim them to ensure they cook evenly and slice beautifully. 

Low-temperature roasting is the key to protecting the tenderness grass-fed beef is known for. Let it warm slowly in the oven, rest, then finish with a hot sear to bring out a deep golden crust. Medium rare honors the cut best, preserving its velvety texture and gentle richness.

Flavorful Garlic Herb Butter Sauce

Add an extra touch of indulgence to your steak with this simple and delicious garlic herb butter sauce:

Ingredients:

  • 1/2 cup unsalted butter (1 stick)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Juice of 1 lemon (optional)

Instructions:

  1. In a small saucepan, melt the butter over medium heat.
